1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 large eggs

1/2 cup Panko breadcrumbs

Salt and pepper, to taste

1 tablespoon vegetable oil

1 cup cooked jasmine rice

1 cup shredded cabbage (green and red mixed)

1/2 cup shredded carrots

1 avocado, sliced

1 green onion, chopped

Sesame seeds for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 tablespoon lime juice

Salt, to taste

Prepare the sauce: In a small mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and a pinch of salt. Adjust the spiciness by adding more sriracha if desired. Set aside.

    Prepare the chicken: Season the chicken thighs with salt and pepper. Set up a dredging station with three bowls: one with cornstarch, one with beaten eggs, and one with Panko breadcrumbs.

      Dredge the chicken: Coat each chicken thigh in cornstarch, then dip into the egg, and finally, coat with Panko breadcrumbs. Ensure an even coating for maximum crunch.
