Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup breadcrumbs (Panko preferred)

1/2 cup corn starch

2 large eggs, beaten

1/4 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

1 avocado, sliced

Fresh cilantro, for garnish

Sesame seeds, for garnish

Soy sauce, for drizzling

Instructions
 

Prepare the Chicken: Cut the chicken thighs into bite-sized pieces and season with salt and pepper.

    Coat the Chicken: Set up a dredging station by placing corn starch in one bowl, beaten eggs in another, and breadcrumbs in a third. Dip each piece of chicken in corn starch, then into the beaten eggs, and finally coat with breadcrumbs.

      Fry the Chicken: Heat a large skillet over medium-high heat and add oil for frying. Once hot, fry the coated chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

        Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until well combined. Adjust sriracha for your preferred level of spiciness.

          Assemble the Bowl: In serving bowls, layer cooked jasmine rice as the base. Top with the fried chicken pieces. Add shredded carrots, sliced cucumbers, and sliced avocado.

            Finish and Garnish: Drizzle with the Bang Bang Sauce over the top, sprinkle with sesame seeds, and garnish with fresh cilantro. Add a drizzle of soy sauce if desired.
