Bang Bang Chicken Bowl

1 lb chicken breast, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko bread crumbs

1 tablespoon vegetable oil (for frying)

1 cup cooked jasmine rice

1 cup shredded carrots

1 cup sugar snap peas, trimmed

½ cup sliced green onions

2 cups mixed greens (spinach, arugula, etc.)

¼ cup chopped cilantro (for garnish)

Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for heat preference)

1 teaspoon lime juice

Salt and pepper to taste

Prepare the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, Sriracha, lime juice, salt, and pepper. Adjust the spiciness to your preference. Set aside.

    Coat the Chicken: In one bowl, place cornstarch. In a second bowl, add beaten eggs. In a third bowl, place panko breadcrumbs. Dip each piece of chicken first into the cornstarch, shaking off any excess, then into the egg, and finally coat with panko breadcrumbs.

      Fry the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
