Bananas Foster French Toast with Homemade Banana Bread

For the Banana Bread:

3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon baking soda

Pinch of salt

3/4 cup sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup chopped walnuts (optional)

For the Bananas Foster Topping:

2 tablespoons unsalted butter

1/2 cup brown sugar

1 teaspoon cinnamon

2 ripe bananas, sliced

1/4 cup dark rum

1 teaspoon vanilla extract

For the French Toast:

4 slices of the homemade banana bread

2 eggs

1/2 cup milk

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Butter for cooking

Making the Banana Bread:

    Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

      In a mixing bowl, combine the mashed bananas with melted butter.

        Mix in the baking soda and salt.

          Stir in the sugar, beaten egg, and vanilla extract until well combined.

            Add the flour and gently stir until just incorporated. If using, fold in chopped walnuts.

              Pour the batter into the prepared loaf pan and smooth the top.

                Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before slicing.

                  Making the Bananas Foster Topping:

                    In a skillet over medium heat, melt the butter.

                      Stir in the brown sugar and cinnamon, cooking until bubbly.

                        Add the sliced bananas and cook for about 2 minutes until they start to soften.

                          Carefully add the dark rum and vanilla extract, cooking for another minute. (Optional: ignite the rum carefully for a flambé effect before it burns off.)

                            Remove from heat and set aside.

                              Making the French Toast:

                                In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt.

                                  Heat a skillet over medium heat and add a little butter.

                                    Dip each slice of banana bread in the egg mixture, coating both sides.

                                      Cook the soaked banana bread slices in the skillet for about 2-3 minutes on each side until golden brown.

                                        Serve the French toast hot, topped generously with the Bananas Foster mixture.
