1 cup ripe bananas, mashed (about 2 medium bananas)

1 cup grated zucchini (about 1 medium zucchini, excess moisture squeezed out)

1/3 cup melted coconut oil (or vegetable oil)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the melted coconut oil, mashed bananas, and grated zucchini. Stir well to combine. Add the brown sugar, granulated sugar, eggs, and vanilla extract. Mix thoroughly until the mixture is smooth.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredient mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.
