2 ripe bananas

1 cup rolled oats

1 cup almond milk (or any milk of your choice)

2 large eggs

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional toppings: fresh fruit, maple syrup, nut butter, or yogurt

Instructions
 

Start by adding the rolled oats to a blender and blend on high until the oats have turned into a fine flour-like consistency.

    Next, add the ripe bananas, almond milk, eggs, baking powder, vanilla extract, cinnamon, and salt into the blender with the oat flour.

      Blend until all the ingredients are well combined, and a smooth batter forms. Scrape down the sides of the blender if needed to ensure everything is mixed thoroughly.

        Preheat a non-stick skillet or griddle over medium heat. If desired, lightly grease the surface with a bit of cooking spray or a little oil.

          Pour about 1/4 cup of batter for each pancake onto the heated skillet.

            Cook for about 2-3 minutes until small bubbles appear on the surface and the edges start to look set. Flip the pancakes and cook for an additional 1-2 minutes until golden brown on the other side.

              Repeat with the remaining batter until all pancakes are cooked.
