Banana Bread Instant Pot Steel Cut Oatmeal

Ingredients
  

1 cup steel cut oats

4 cups water (or milk for creaminess)

2 ripe bananas, mashed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup brown sugar or maple syrup (adjust for sweetness)

1/2 cup chopped walnuts or pecans (optional)

Pinch of salt

Slices of banana and chopped nuts for topping (optional)

Instructions
 

Start by adding the steel cut oats and water (or milk) to the Instant Pot inner pot. Stir to combine.

    Add the mashed bananas, vanilla extract, ground cinnamon, nutmeg, brown sugar (or maple syrup), and a pinch of salt. Mix well until all ingredients are evenly distributed.

      Secure the lid on the Instant Pot, ensuring the steam release valve is set to the sealing position.

        Select the Porridge setting and set the cooking time to 10 minutes. If your Instant Pot does not have a porridge setting, use the manual pressure setting at high pressure for 10 minutes.

          Once the cooking time is complete, allow the Instant Pot to naturally release the pressure for about 10 minutes, then carefully switch the valve to the venting position to release any remaining pressure.

            Open the lid and give the oatmeal a good stir. If it’s too thick, add a splash of water or milk to reach your desired consistency.

              Stir in the chopped nuts if you’re using them, and adjust the sweetness if needed.

                Serve hot, topped with slices of fresh banana and extra chopped nuts if desired.
