2 cups rolled oats

2 ripe bananas, mashed

1 cup milk (dairy or non-dairy)

1/2 cup Greek yogurt or applesauce

1/4 cup maple syrup or honey (adjust for sweetness)

2 eggs, lightly beaten

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup chocolate chips or dried fruits (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch (or similar size) baking dish with cooking spray or a small amount of oil.

    In a large mixing bowl, combine the mashed bananas, milk, Greek yogurt (or applesauce), maple syrup (or honey), eggs, and vanilla extract. Whisk together until you have a smooth mixture.

      In a separate bowl, whisk together the rolled oats, baking powder, baking soda, ground cinnamon, and salt.

        Gradually add the dry ingredients to the wet mixture, stirring until well combined. If desired, fold in the chopped nuts and chocolate chips or dried fruits at this point for additional flavor and texture.

          Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.

            Bake in the preheated oven for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.

              Remove from the oven and let it cool for a few minutes before slicing into squares. Serve warm as is, or topped with additional banana slices, a drizzle of maple syrup, or a dollop of yogurt.
