Ingredients
  

2 slices of sourdough bread

1 cup fresh blackberries

2 tablespoons balsamic vinegar

1 tablespoon honey

1/2 cup shredded sharp cheddar cheese

1/2 cup crumbled goat cheese

2 tablespoons unsalted butter

Fresh basil leaves (for garnish, optional)

Salt and pepper to taste

Instructions
 

In a small saucepan over medium heat, combine the fresh blackberries, balsamic vinegar, honey, and a pinch of salt. Cook for about 5-7 minutes, stirring gently until the blackberries soften and the mixture thickens. Remove from heat and let it cool slightly.

    While the blackberry mixture cools, take the slices of sourdough bread and butter one side of each slice.

      Heat a non-stick skillet over medium heat. Place one slice of bread, buttered side down, in the skillet.

        On top of the unbuttered side of the bread, layer the shredded cheddar cheese, followed by the crumbled goat cheese, and then spoon the balsamic blackberry mixture over the cheese.

          Season with fresh cracked pepper and top with the second slice of bread, buttered side facing up.

            Cook for about 3-4 minutes until the bottom slice is golden brown, then carefully flip the sandwich and continue to cook for another 3-4 minutes until the other side is also golden and the cheese is melted.

              Remove the grilled cheese from the skillet and let it rest for a minute. Optionally, garnish with fresh basil leaves before slicing.

                Serve warm and enjoy the delightful sweet-tart flavors of the blackberries alongside the creamy cheeses!
