The story of German pancakes, or Dutch babies, begins in the early 1900s in the United States, where German immigrants brought their culinary traditions. This dish has since evolved into a beloved breakfast staple across the nation. Despite its name, the Dutch baby pancake is not actually from the Netherlands; rather, it is a uniquely American creation inspired by the traditional German Pfannkuchen.

Ingredients

6 large eggs

1 cup whole milk

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup unsalted butter (melted)

Powdered sugar (for dusting)

Fresh lemon wedges (for serving)

Fresh berries (optional, for topping)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Place a 10 to 12-inch cast iron skillet or oven-safe baking dish inside to heat up.

Blend the Batter: In a medium mixing bowl, whisk together the eggs, milk, flour, salt, and vanilla extract until smooth and frothy. You can use a blender for best results.

Prepare the Skillet: Carefully remove the hot skillet from the oven. Add the melted butter to the skillet, swirling it to coat the sides evenly.

Pour the Batter: Immediately pour the batter into the hot skillet over the melted butter. Return the skillet to the oven.

Bake: Bake the pancake for 20-25 minutes, or until it has risen high and is golden brown on top. Do not open the oven door during the baking process to avoid collapsing.

Serve: Remove from the oven, and allow to cool slightly. Dust with powdered sugar and serve with fresh lemon wedges and berries, if desired.
