Ingredients

1 block (8 oz) feta cheese

1 pint cherry tomatoes (around 2 cups)

3 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

Salt and black pepper to taste

12 oz pasta (penne, fusilli, or your choice)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Dish: In a large baking dish, add the block of feta cheese in the center. Surround it with cherry tomatoes and sprinkle the minced garlic on top.

Season: Drizzle the olive oil over the feta cheese and tomatoes, adding dried oregano, red pepper flakes (if using), salt, and black pepper. Toss the tomatoes gently to mix everything.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes until the feta is golden and soft, and the tomatoes have burst and released their juices.

Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.

Combine: Once the feta is ready, remove the baking dish from the oven. Use a fork to mash the baked feta and tomatoes together until smooth and creamy, creating a sauce.

Mix with Pasta: Add the drained pasta to the baking dish with the feta-tomato mixture. Toss well to combine, adding reserved pasta water as needed to loosen the sauce.

Serve: Serve the pasta warm, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired. Enjoy your baked feta pasta!
