Ingredients

200g (7 oz) feta cheese (block)

300g (10.5 oz) cherry tomatoes

3 cloves garlic, minced

250g (9 oz) pasta of your choice (e.g., penne or fusilli)

¼ cup olive oil

1 tsp dried oregano

½ tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional)

Grated Parmesan cheese (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Baking Dish: In a large baking dish, add the cherry tomatoes and minced garlic. Drizzle with olive oil and sprinkle with dried oregano, red pepper flakes, salt, and pepper. Toss the ingredients together to ensure everything is well-coated.

Add Feta: Place the block of feta cheese in the center of the tomatoes. Drizzle a little more olive oil on top of the feta and sprinkle with a pinch of salt and pepper.

Bake: Transfer the baking dish to the preheated oven and bake for about 25-30 minutes, or until the tomatoes are blistered and the feta is golden and soft.

Cook the Pasta: Meanwhile, cook the pasta according to package instructions until al dente. Reserve about ½ cup of the pasta cooking water, then drain the pasta.

Combine: Once the baking is done, remove the dish from the oven. Use a fork to gently mash the feta and tomatoes together, creating a creamy sauce. If the mixture is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Toss with Pasta: Add the cooked pasta into the baking dish and mix well, ensuring the pasta is evenly coated with the feta-tomato sauce.

Garnish and Serve: Transfer to serving plates. Garnish with fresh basil leaves, a sprinkle of lemon zest, and grated Parmesan cheese as desired. Enjoy your delicious Baked Feta Pasta!
