Baked Boursin Spaghetti Squash

Ingredients
  

1 medium spaghetti squash

8 oz Boursin cheese (garlic and herbs flavor)

2 cups cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Carefully slice the spaghetti squash in half lengthwise. Scoop out the seeds and stringy bits from the center. Drizzle the insides with olive oil and season with salt, pepper, and garlic powder.

      Roast the Squash: Place the halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and can easily be shredded with a fork.

        Combine Boursin and Vegetables: In a mixing bowl, combine the Boursin cheese, halved cherry tomatoes, chopped spinach, dried oregano, salt, and pepper. Mix until well combined.

          Stuff the Squash: Once the spaghetti squash is cooked, remove it from the oven and carefully flip it over. Use a fork to gently rake the spaghetti-like strands from the flesh. Spoon the Boursin mixture evenly into each half of the spaghetti squash, packing it lightly.

            Bake Again: Return the stuffed squash halves to the oven. Bake for an additional 15-20 minutes, until the filling is heated through and starting to brown slightly.
