1 pre-made pie crust (store-bought or homemade)

6 slices of thick-cut bacon, chopped

1 cup pumpkin puree (canned or fresh)

3 large eggs

1 cup heavy cream

1/4 cup maple syrup (plus extra for drizzling)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and pepper to taste

1/2 cup grated Gruyère cheese (or your favorite cheese)

Fresh sage leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess fat. Leave about 2 tablespoons of bacon fat in the skillet and set aside.

      Prepare the Crust: Fit the pie crust into a 9-inch tart pan, trimming any excess dough. Press the crust against the edges and pierce the bottom with a fork to prevent bubbling. Pre-bake the crust for 10 minutes and then remove from the oven.

        Make the Filling: In a large mixing bowl, whisk together the pumpkin puree, eggs, heavy cream, maple syrup, ground cinnamon, ground nutmeg, and a pinch of salt and pepper until smooth.

          Assemble the Tart: Spread the cooked bacon evenly over the pre-baked crust. Pour the pumpkin mixture over the bacon, then sprinkle the grated Gruyère cheese on top.

            Bake: Place the tart in the oven and bake for 30-35 minutes, or until the filling is set and the top is golden brown.

              Cool and Serve: Allow the tart to cool for a few minutes before drizzling with additional maple syrup. Garnish with fresh sage leaves if desired.
