Ingredients

8 slices of white or whole grain bread

4 large eggs

1/2 cup milk

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

8 slices of cooked bacon, chopped

1/4 cup sugar (for coating)

1/4 teaspoon salt

Butter, for cooking

Maple syrup, for serving

Fresh berries (optional, for garnish)

Instructions

Prepare the Bread: Use a rolling pin to flatten each slice of bread to about 1/4 inch thick. This will help in rolling them up easily.

Make the Filling: In a bowl, mix the chopped bacon, a tablespoon of sugar, and a pinch of cinnamon. Divide this mixture among the flattened bread slices.

Roll the Bread: Starting from one end, tightly roll each slice of bread around the bacon mixture. Secure the ends with a toothpick if needed.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt.

Coat the Rolls: Dip each bacon roll-up into the egg mixture, ensuring they are fully coated.

Cook: In a skillet over medium heat, melt a tablespoon of butter. Place the roll-ups seam side down in the pan and cook for about 3-4 minutes on each side until golden brown and crispy.

Sugar Coating: In a shallow bowl, mix the remaining sugar and cinnamon. Once the roll-ups are cooked, immediately toss them in the sugar mixture to coat.

Serve: Remove toothpicks if used, and serve the Bacon French Toast Roll Ups warm with maple syrup drizzled on top and a handful of fresh berries, if desired.
