6 slices of thick-cut bacon

6 large eggs

1 cup shredded cheddar cheese

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon black pepper

½ cup milk

¼ cup unsalted butter, melted

1 tablespoon chopped chives (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a standard muffin tin or line it with muffin liners.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer the cooked bacon to a paper towel-lined plate to drain. Once cooled, crumble bacon into small pieces.

      Prepare the Batter: In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper until evenly combined.

        Wet Ingredients: In a separate bowl, combine the milk and melted butter. Stir in the eggs and mix until well combined.

          Combine and Fold: Gradually add the wet mixture to the dry ingredients. Stir gently to combine, being careful not to overmix. Fold in the crumbled bacon, shredded cheese, and chives if using.

            Fill Muffin Tin: Divide the mixture evenly among the muffin cups, filling each about ⅔ full.

              Add a Dash of Egg: Crack one egg directly on top of each muffin cup filled with the batter. You can season the egg with a pinch of salt and pepper if desired.

                Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the muffins are golden and a toothpick inserted in the bread portion comes out clean. The eggs will also be set to your liking.

                  Cool and Serve: Remove from the oven and let the muffins cool in the tin for about 5 minutes, then transfer to a wire rack. Enjoy warm!
