6 large eggs

3 strips of bacon, cooked and crumbled

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon apple cider vinegar

Salt and pepper to taste

1 tablespoon freshly chopped chives (plus more for garnish)

Paprika for garnish (optional)

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the pot and turn off the heat. Let the eggs sit for 10-12 minutes.

    Cool the Eggs: After the time is finished, transfer the eggs to an ice water bath to cool for at least 5 minutes. This will also make peeling easier.

      Prepare the Filling: Peel the eggs carefully, then slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Set the whites aside.

        Mix the Ingredients: Add the crumbled bacon, mayonnaise, Dijon mustard, apple cider vinegar, salt, pepper, and chopped chives to the yolks. Mash everything together until smooth and creamy.

          Fill the Egg Whites: Spoon or pipe the yolk mixture back into the egg white halves.

            Garnish & Serve: Sprinkle paprika on top if desired, and garnish with additional chives. Serve immediately or refrigerate until ready to serve.
