Ingredients

1 lb ground beef (80/20)

4 slices of bacon

4 slices of American cheese

1 medium onion, thinly sliced

4 slices of rye bread

2 tablespoons butter, softened

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Optional: pickles and ketchup for serving

Instructions

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and set aside on a paper towel to drain. Reserve about 1 tablespoon of the bacon drippings in the skillet.

Caramelize the Onions: In the same skillet, add the sliced onions to the reserved bacon drippings. Cook over medium-low heat, stirring occasionally, until the onions are soft and caramelized, about 10-15 minutes. Season with a pinch of salt. Remove from the skillet and set aside.

Prepare the Patties: In a bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Form into two equal patties.

Cook the Patties: Using the same skillet, increase the heat to medium-high. Add the beef patties and cook for about 4-5 minutes on one side. Flip the patties, place two slices of American cheese on each patty, and cook for an additional 3-4 minutes or until the cheese melts and the patties reach your desired doneness.

Assemble the Patty Melt: Spread softened butter on one side of each slice of rye bread. On the unbuttered side of two slices, layer caramelized onions, a bacon slice (cut in half if necessary), and a cheeseburger patty. Top with the remaining slices of rye bread, buttered side facing up.

Grill the Sandwiches: Clean the skillet or use a separate one and cook the sandwich over medium heat. Grill each side for about 4-5 minutes or until the bread is golden brown and crispy. You may need to press down gently with a spatula for even grilling.

Serve: Slice the patty melt in half and serve immediately with pickles and ketchup if desired.
