For the Dumplings:

1 cup all-purpose flour

1/2 cup water (more as needed)

1/2 tsp salt

1 cup ground pork (or chicken)

2 green onions, finely chopped

1 tbsp ginger, minced

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tsp chili oil (adjust for spice level)

Salt and pepper to taste

For the Soup:

6 cups chicken or vegetable broth

2 cups bok choy, chopped

1 carrot, julienned

1/2 cup mushrooms, sliced (shiitake or cremini)

2 tbsp soy sauce

1 tbsp chili paste (adjust for spice level)

Fresh cilantro for garnish

Sliced red chili for garnish (optional)

Lime wedges for serving

Instructions
 

Make the Dumpling Dough:

    - In a mixing bowl, combine the flour and salt. Gradually add water until a smooth dough forms. Knead for about 5 minutes until elastic. Cover and let it rest for 30 minutes.

      Prepare the Dumpling Filling:

        - In another bowl, mix along with ground meat, green onions, ginger, garlic, soy sauce, sesame oil, and chili oil. Add salt and pepper to taste. Mix well until combined.

          Form the Dumplings:

            - Roll or flatten the dough into thin circles (about 3 inches in diameter). Place a teaspoon of filling in the center of each circle. Moisten the edges with water and fold over to seal, making sure there are no openings.

              Prepare the Soup:

                - In a large pot, bring the chicken or vegetable broth to a boil. Add the julienned carrots, sliced mushrooms, and soy sauce. Let it simmer for about 5 minutes.

                  Cook the Dumplings:

                    - Carefully add the dumplings to the boiling broth. Cook for approximately 5-7 minutes, or until they float to the surface and are cooked through.

                      Add the Greens:

                        - Stir in the chopped bok choy and chili paste. Allow to cook for another 2-3 minutes until the greens are tender.

                          Serve:
