2 lbs chicken pieces (preferably bone-in, skinless)

2 tablespoons Jamaican curry powder

1 teaspoon allspice

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

2 tablespoons vegetable oil (or coconut oil)

1 medium onion, chopped

4 cloves garlic, minced

1-inch piece of fresh ginger, grated

2-3 scallions, chopped

1-2 Scotch bonnet peppers (whole, adjust for heat preference)

1 medium carrot, sliced

2 medium potatoes, diced

2 cups chicken broth (or water)

1 tablespoon soy sauce (optional)

Fresh cilantro or parsley for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with Jamaican curry powder, allspice, salt, and black pepper. Massage the spices into the chicken to ensure even coating. Cover and let marinate for at least 1 hour (or overnight in the fridge for best flavor).

    Sauté Aromatics: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, grated ginger, and chopped scallions, cooking for an additional 2 minutes until fragrant.

      Brown the Chicken: Increase the heat to medium-high and add the marinated chicken pieces to the pot. Brown the chicken on all sides, about 5 minutes. This step adds depth to the flavor.

        Add Vegetables and Liquid: Stir in the sliced carrot, diced potatoes, and whole Scotch bonnet peppers. Pour in the chicken broth (or water) and add soy sauce if using. Bring to a boil, then reduce the heat to low to allow it to simmer.

          Simmer: Cover the pot and simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender. Stir occasionally and adjust seasoning if necessary.

            Finish and Serve: Once cooked, remove from heat and let it sit for a few minutes. Discard the Scotch bonnet peppers (or leave it for extra heat). Garnish with fresh cilantro or parsley before serving.
