Ingredients

1 package of phyllo dough (16 oz), thawed

2 cups walnuts, finely chopped

1 cup pistachios, finely chopped

1 cup unsalted butter, melted

1 teaspoon ground cinnamon

1 cup granulated sugar

1 cup water

1/2 cup honey

1 teaspoon vanilla extract

1 tablespoon lemon juice

Instructions

Prepare the Filling: In a mixing bowl, combine the finely chopped walnuts, pistachios, and ground cinnamon. Set aside.

Assemble the Phyllo Dough: Preheat your oven to 350°F (175°C). Take a sheet of phyllo dough and brush it lightly with melted butter. Place another sheet on top and brush with butter again.

Add Filling: Spread about 1/3 cup of the nut mixture evenly across the bottom edge of the phyllo stack, leaving a 1-inch border. Roll the phyllo tightly from the edge with the filling towards the opposite edge to form a log. Brush the top with more melted butter and place seam-side down on a greased baking sheet.

Repeat: Continue this process with the remaining phyllo and nut mixture, placing each roll on the baking sheet with a little space between them.

Bake: Bake the baklava rolls in the preheated oven for 25-30 minutes, or until golden brown and crisp.

Prepare the Syrup: While the rolls are baking, prepare the syrup. In a saucepan, combine sugar, water, honey, and lemon juice. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Stir in the vanilla extract, then remove from heat and let cool.

Drizzle the Syrup: Once the baklava rolls are done baking, remove them from the oven and immediately pour the cooled syrup over them, making sure to cover each roll evenly.

Cool and Serve: Allow the baklava rolls to cool completely. Once cool, slice them into bite-size pieces and serve. Enjoy the delightful layers of nuts and sweetness!
