1 sheet of puff pastry (thawed if frozen)

1 bunch of asparagus, trimmed

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 egg, beaten (for egg wash)

Salt and pepper to taste

Zest of 1 lemon

2 tablespoons olive oil

Fresh thyme leaves for garnish

Optional: Balsamic glaze for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface to create a rectangle or circle, about 1/8 inch thick. Transfer it to the prepared baking sheet.

      Score the Edges: Using a sharp knife, carefully score a 1-inch border around the edges of the puff pastry without cutting all the way through. This will help create a border that puffs up.

        Pre-bake the Pastry: Prick the center area of the pastry with a fork to prevent it from puffing up too much. Bake in the preheated oven for about 10 minutes until it starts to get lightly golden.

          Prepare the Filling: In a bowl, combine the ricotta cheese, grated Parmesan cheese, lemon zest, salt, and pepper. Mix well until it is smooth and creamy.
