Ingredients
  

1 cup wheat berries

4 cups water

1 cup sugar (adjust to taste)

1 cup milk (or plant-based alternative)

1/2 cup dried apricots, chopped

1/2 cup raisins

1/2 cup walnuts, chopped

1/2 cup pomegranate seeds

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/4 cup dried figs, chopped

1/4 cup almonds, blanched and chopped

1 tablespoon orange zest

A pinch of salt

Instructions
 

Prepare the Wheat:

    - Rinse the wheat berries thoroughly under cold water. In a large pot, combine the wheat berries and water. Let it soak overnight for best results.

      Cook the Wheat:

        - The next day, bring the soaked wheat berries to a boil over medium heat. Reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours or until the wheat is tender and starts to burst.

          Add Milk and Sweeteners:

            - Once the wheat is cooked, add sugar, milk, and a pinch of salt to the pot. Stir well and continue to simmer for 15 more minutes, stirring occasionally to prevent sticking.

              Incorporate Fruits and Spices:

                - Add in the chopped apricots, raisins, figs, walnuts, almonds, and orange zest. Then sprinkle in the cinnamon and vanilla extract. Mix everything well and allow it to simmer for another 10 minutes.

                  Finish and Serve:

                    - Once all ingredients are well combined and the mixture has thickened slightly, remove from heat. Allow the pudding to cool slightly, then ladle into serving bowls.

                      Garnish and Decorate:

                        - Once cooled, top each serving with a sprinkle of pomegranate seeds and additional walnuts or almonds if desired. You may also drizzle some honey or syrup over the top for extra sweetness.

                          Chill:

                            - Place the bowls in the refrigerator to chill for at least 2 hours before serving. Ashure can be served chilled or at room temperature.
