Ingredients
  

2 cups all-purpose flour

1/2 cup semolina

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, melted

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 cup milk (or as needed)

For the Date Filling:

2 cups pitted dates, chopped

1/2 teaspoon ground cardamom

1 tablespoon orange blossom water (or more for desired flavor)

1 tablespoon unsalted butter

Instructions
 

Prepare the Date Filling:

    - In a medium saucepan, combine the chopped dates, ground cardamom, orange blossom water, and unsalted butter.

      - Cook over low heat, stirring frequently until the mixture becomes soft and sticky (approximately 5-7 minutes).

        - Remove from heat and let it cool while you prepare the dough.

          Make the Dough:

            - In a large mixing bowl, whisk together the all-purpose flour, semolina, baking powder, baking soda, and salt.

              - In a separate bowl, mix the melted butter, powdered sugar, vanilla extract, and ground cinnamon until smooth.

                - Gradually combine the wet ingredients with the dry ingredients, mixing gently with your hands.

                  - Add milk little by little until the dough comes together (it should be moist but not sticky).

                    Shape the Cookies:

                      - Preheat your oven to 350°F (175°C).

                        - Take a small amount of dough (about the size of a walnut) and flatten it in your palm to form a small disc.
