Ingredients

2 cups all-purpose flour

1/2 cup warm water

1/4 cup olive oil

1/4 teaspoon salt

1 teaspoon sugar

1/2 teaspoon baking powder

1 tablespoon lemon juice

2 tablespoons yogurt (optional for richness)

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the flour, salt, sugar, and baking powder. Whisk together to ensure an even distribution.

Create a Well: Form a well in the center of the dry ingredients.

Combine Wet Ingredients: In a separate bowl, mix the warm water, olive oil, lemon juice, and yogurt until smooth.

Incorporate Wet into Dry: Pour the wet mixture into the well of dry ingredients. Stir with a fork until the dough begins to come together.

Knead the Dough: Transfer the dough onto a floured surface. Knead it gently for about 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour as needed.

Rest the Dough: Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes. This allows the gluten to relax, making it easier to roll out later.

Roll Out: After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball out on a floured surface to your desired thickness (about 1/8 inch is ideal for most Arabic breads).

Cook the Dough: Preheat a skillet or griddle over medium heat. Cook each rolled-out dough piece for about 1-2 minutes on each side until golden brown and slightly puffed. Adjust the heat as needed to avoid burning.

Serve Warm: Stack the cooked dough and cover it with a clean cloth to keep warm until serving. This dough is excellent for wraps, sandwiches, or served alongside dips like hummus or baba ganoush.
