1 cup rolled oats

1 cup unsweetened almond milk (or milk of choice)

1 medium apple, peeled and diced

1/4 teaspoon vanilla extract

2 tablespoons chopped pecans or walnuts (optional)

1 tablespoon chia seeds (for extra nutrition)

Greek yogurt (for topping, optional)

In a large mixing bowl, combine the rolled oats, almond milk, diced apple, maple syrup, cinnamon, nutmeg, and vanilla extract. Stir well to combine the ingredients.

    If you're using chia seeds, add them to the mixture now, as they will help thicken the oats overnight.

      Divide the mixture evenly into two jars or containers with lids. Make sure each jar has the apple pieces evenly distributed.
