2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup powdered sugar (for dusting)

Prepare the Apples: After dicing the apples, place them in a bowl and sprinkle with a little cinnamon and sugar (about a teaspoon of each). This adds extra flavor and helps to release their juices.

    Make the Batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt. In a separate bowl, mix the milk, egg, and vanilla extract. Combine the wet ingredients into the dry ingredients, stirring until just combined. Fold in the diced apples.

      Heat the Oil: In a deep skillet or pot, pour enough oil to submerge the fritter bites (about 2 inches deep), and heat it over medium heat until hot (about 360°F or 182°C).

        Fry the Bites: Once the oil is hot, use a tablespoon to drop small dollops of the batter into the oil. Do not overcrowd the pot. Fry until golden brown, about 2-3 minutes on each side, turning them gently for even cooking.

          Drain and Dust: Remove the fritters from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil. While they are still warm, dust with powdered sugar.
