Ingredients

4 large slices of brioche or challah bread

2 large eggs

1 cup milk (or almond milk for a dairy-free option)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

2 tablespoons sugar (brown or white)

1 apple, peeled and diced

1 tablespoon butter (or coconut oil for a dairy-free option)

Maple syrup, for serving

Powdered sugar, for dusting (optional)

Instructions

In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until combined.

Heat a non-stick skillet or griddle over medium heat and add the butter, allowing it to melt and coat the surface.

Dip each slice of the bread into the egg mixture, ensuring both sides are soaked but not overly soggy.

Place the soaked bread slices into the hot skillet and cook for 3-4 minutes on each side, or until golden brown and slightly crispy.

While the French toast is cooking, toss the diced apples in a small bowl with a sprinkle of cinnamon and sugar.

In a separate small pan, cook the apples over medium heat for about 5 minutes, or until they start to soften.

To serve, stack the French toast slices on plates, top with the sautéed apples, and drizzle with maple syrup. Optional: dust with powdered sugar before serving.
