1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup diced celery

1 cup diced carrots

1 can (15 oz) diced tomatoes, undrained

1 can (8 oz) tomato sauce

1 cup beef broth

2 teaspoons Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

4 cups egg noodles, uncooked

1 cup sharp cheddar cheese, shredded

1 cup cottage cheese

2 cups green beans, fresh or frozen

Fresh parsley, chopped for garnish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks (about 5-7 minutes). Drain excess fat.

      Sauté Vegetables: Add the chopped onion, garlic, celery, and carrots to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.

        Combine Ingredients: Stir in the diced tomatoes (with juice), tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Let the mixture simmer for about 10 minutes.

          Cook Egg Noodles: While the beef mixture simmers, cook the egg noodles according to package instructions until al dente. Drain and set aside.

            Assemble the Casserole: In a large mixing bowl, combine the cooked noodles, beef mixture, cottage cheese, and green beans. Mix until well combined.

              Layer Cheese: Transfer the mixture into a greased 9x13-inch casserole dish. Sprinkle the top with shredded cheddar cheese evenly.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

                  Serve: Once done, remove the casserole from the oven and let it sit for about 5 minutes. Garnish with fresh chopped parsley before serving.
