2 ripe bananas, mashed

1 1/2 cups almond flour

1/4 cup honey or maple syrup

2 large eggs

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 tsp cinnamon (optional)

1/2 cup dark chocolate chips or chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    In a large mixing bowl, combine the mashed bananas, honey or maple syrup, eggs, applesauce, and vanilla extract. Whisk everything together until smooth.

      In a separate bowl, mix the almond flour, baking soda, baking powder, salt, and cinnamon (if using).

        Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

          If desired, fold in the dark chocolate chips or chopped walnuts for added flavor and texture.

            Scoop the batter evenly into the muffin tins, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.

                Once done, remove from the oven and let the muffins cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
