For the Almond Crepes:

1 cup all-purpose flour

1/4 cup almond flour

3 large eggs

1 1/2 cups milk

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 tablespoon almond extract

2 tablespoons melted butter

Pinch of salt

For the Warm Berries:

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tablespoons honey or maple syrup

1 teaspoon lemon juice

Fresh mint leaves for garnish (optional)

Make the Crepe Batter: In a large mixing bowl, whisk together the all-purpose flour, almond flour, and sugar. In a separate bowl, beat the eggs and then add in the milk, vanilla extract, almond extract, melted butter, and a pinch of salt. Gradually combine the wet and dry ingredients, whisking until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes: Heat a non-stick skillet over medium heat. Lightly grease with oil or butter. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes, until the edges begin to lift and the underside is golden. Carefully flip and cook for an additional 1 minute. Remove and keep warm. Repeat with remaining batter.

      Prepare the Warm Berries: In a small saucepan over low heat, add the mixed berries, honey (or maple syrup), and lemon juice. Gently stir and cook for about 3-5 minutes until the berries soften and release their juices. Remove from heat.

        Assemble the Crepes: Take one almond crepe and fold it into quarters or roll it up. Place on a plate, spoon warm berries with their syrup over the top, and garnish with fresh mint leaves if desired.
