Ingredients

1 cup unsalted butter, softened

1 cup powdered sugar

1 large egg yolk

2 teaspoons vanilla extract

2 cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup chopped nuts (e.g., pecans or almonds)

½ cup dried cranberries, chopped

½ teaspoon ground cinnamon

1 cup white chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter & Sugar: In a large mixing bowl, use an electric mixer to beat the softened butter and powdered sugar together until light and fluffy (about 3-4 minutes).

Add Egg Yolk and Vanilla: Beat in the egg yolk and vanilla extract until well blended.

Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Gradually add this mixture to the butter mixture, stirring until just combined.

Fold in Mix-ins: Gently fold in the chopped nuts, dried cranberries, and white chocolate chips (if using).

Shape the Cookies: Using a tablespoon or a cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Cool: Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Dust with Powdered Sugar: If desired, dust cooled cookies with powdered sugar before serving.
