2 cups cherry tomatoes, halved

12 oz pasta (such as penne or fusilli)

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup goat cheese, crumbled

1/2 cup fontina cheese, shredded

1/2 cup gouda cheese, shredded

Fresh basil leaves, for garnish

Red pepper flakes (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Roast Tomatoes: On a baking sheet, toss the halved cherry tomatoes with olive oil, salt, pepper, basil, and oregano. Spread them evenly and roast in the oven for about 20 minutes or until they are blistered and caramelized.

      Cook Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
