200g udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon rice vinegar

1 tablespoon sesame oil

1 green onion, thinly sliced

1 small carrot, julienned

1 cup baby spinach (or other leafy greens)

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Udon Noodles: In a large pot of boiling water, cook the udon noodles according to package instructions (about 3-4 minutes). Drain and set aside.

    Prepare the Sauce: In a mixing bowl, combine the chili oil, minced garlic, soy sauce, rice vinegar, and sesame oil. Mix well to combine.
